Mix Together:
1 cup raw almonds, ground coarsely
1 cup quick rolled outs, ground to a fine flour
1 cup whole wheat pastry flour
Add:
1/2-3/4 tsp cinnamon or cardamom
3/4 tsp salt
Mix and add:
1/2 cup olive oil
1/2 cup maple syrup
1-2 Tbs applesauce
 
Form into firm balls (balls should hold together, if not, add more of the liquid ingredients).  Roll in hands.  While still in hands make a depression with thumb.  Balls should be about the size of a walnut. 
 
Bake at 350 degrees about 15 minutes.
 
While still in the pan, fill holes with colorful jam.
