Potatoes
1 onion
Peas or other vegetables, optional
Water or vegetable broth
Seasonings, such as dill or whatever herb you like with potatoes
Salt and pepper as desired
 
You will be cooking your potatoes in two separate pans.  For the base, peel and cube potatoes, chop onion, and add enough water to simmer until potatoes are cooked.  Let cool a bit, then pour into a blender and blend smooth.  Pour the blended mixture back into the pan.
 
Meanwhile, in another saucepan, cook some more cubed potatoes.  These won't be pureed, so you can leave the peels on if you want to.  You can also cook your desired vegetables with the potatoes.  When the potatoes and vegetables are cooked, pour into the pan that has the pureed potato base.
 
From here, you can make a delicious cream soup, or you can make creamed potatoes...it just depends on how much liquid you add to the base.  Thin the mixture with water or vegetable broth, to desired consistency.  Add herbs and seasonings as desired.
