Protose Croquettes

This recipe uses a vegetarian meat analogue, Protose, from the Worthington Foods Company.

1-1/2 cup chopped or grated Protose
2 Tbs chopped green pepper
2 eggs, beaten OR other binder
1/2 pound fresh mushrooms (or 3/4 cup canned), chopped
1/2 cup soft bread crumbs
1 onion, chopped
1 Tbs butter, melted (optional)

Season as desired with poultry herb seasoning, garlic, celery salt, basil, sage, etc.

Combine ingredients and shape into croquettes, patties, or a loaf. Fry or bake at 350 for 45-60 minutes.

Serve with tomato or cranberry sauce
