Barbecued Tofu

From Louise Hagler's "Tofu Cookery" cookbook.
 
Freeze, thaw, squeeze out and cut in 1" x 3" strips:
2 lb. firm tofu

Mix:
3 Tbs. peanut butter
1 Tbs. paprika
½ tsp. garlic powder
Salt and pepper to taste

Blend until smooth; pour over tofu strips and squeeze in as evenly as possible. Marinate 1 hour or more. Lay tofu on sprayed cookie sheet. Bake at 350 degrees 25 minutes, until bottom is brown. Turn; bake about 25 minutes more, until
browned. Pour barbecue sauce over all the pieces and bake 15 more minutes.
 
Barbecue Sauce
 
1 medium onion, chopped
2 cloves garlic, minced
2-1/2 cup tomato sauce
1/4 cup water
1 Tbs. molasses
1/2 cup salad mustard
1 tsp. allspice
Salt to taste
1 Tbs. crushed red pepper OR 1/2 tsp. cayenne
1-1/2 tsp. dried parsley OR 1 Tbs. fresh
1/2 cup lemon juice
2 Tbs. soy sauce

Steam onion and garlic in a small amount of water, until softened. Add remaining ingredients except lemon juice and soy sauce and simmer for 1 hour. Stir in lemon juice and soy sauce. Serves 6.
