GLAZED CHICKEN

This recipe is from the book "Conveniently Vegan" by

GLAZED 'CHICKEN'
(Serves 4)

You will relish this mock chicken dish.

1 pound chicken-style wheat meat (gluten), chopped into
bite-size pieces (454 G)
10.5-ounce can Mandarin oranges, drained (294 G)
10-ounce jar apricot jam (280 G)
1/4 cup molasses (60 ml)
2 Tablespoons orange juice (30 ml)
1/4 teaspoon cayenne pepper (1 ml)

Preheat oven to 400 degrees. Meanwhile, spread out chopped
'chicken' in a 9"x9"x2" square pan. Spread oranges on top.
Next, mix remaining ingredients together and pour mixture
over the 'chicken' and oranges. Bake 'chicken' in an oven
at 400 degrees for 20 minutes. Serve warm over a bed of rice.
