Take a thin slice of tofu and put a small amount of tamari, garlic and onion granules
on it. Place a slice of cheese (about the same size as the tofu slice) in a nonstick fry pan. Layer the tofu on
top of the cheese, then another slice of cheese. Fry until the cheese becomes brown and crispy, then flip and repeat.

Use extra-firm tofu, cut into chunks and marinate in soy sauce with a little oil added
(sesame oil tastes good, or red oil), put on bamboo skewers and grill. On the other skewers: red bell pepper,
zucchini, onion, mushrooms, etc. Serve with rice. A little Thai-style peanut dipping sauce tastes good, too.
There must be a million ways to vary the ingredients :-)

1 12-oz pkg firm tofu
2 Tbs rice vinegar
2 Tbs hoisin sauce
1 Tbs minced gingerroot
1 Tbs soy sauce
1 clove garlic, minced
2 Tbs sesame oil
Cut tofu into 1/2-inch slices. In shallow glass dish, combine vinegar, hoisin
sauce, ginger, soy sauce, garlic and oil. Add tofu, turning to coat. Marinate at room temperature for 1 hour or
in refrigerator for up to 8 hours. Reserve marinade, place tofu on greased grill over heat; cook, brushing often with
reserved marinade, for 2 minutes per side. Serves 4.
