1 large can peaches
1 large can fruit cocktail
1 small can crushed pineapple
1 6-oz pkg vegan orange gelatin
8 oz tofu cream cheese
1 jar maraschino cherries
4 ripe bananas, cut into chunks
1 cup tofu whipped cream
1/2 cup walnuts, chopped
Dash or two of ground ginger
Drain peaches, fruit cocktail, and crushed pineapple, and reserve the liquid.
Use reserved fruit liquid rather than water to prepare the orange gelatin as directed on the manufacturer's
package. Cube the tofu cream cheese and add it to the warm gelatin mixture, stirring to dissolve.
Combine the drained peaches, fruit cocktail, crushed pineapple, maraschino cherries, and bananas in
a large serving bowl. Pour the cooled gelatin mixture over the fruit and toss to combine.
Fold the tofu whipped cream into the fruit salad. Top with the chopped walnuts and dash of ginger
and serve.
