Marinade: (Make at least 1 hr before your barbecue)
1/2 c olive oil
1/4 c lemon juice
5 Tbs soy sauce
2 Tbs sesame oil
4 garlic cloves, pressed
1 tsp ground ginger
1 tsp basil
1 tsp tarragon
2 scallions, thinly sliced
Salt and pepper to taste
Combine all marinade ingredients in a jar with a lid and shake well.
Shish Kebabs:
1 pkg of wooden skewers, soaked in water
1 lb firm tofu cut into squares
2 large yellow onions, cut into wedges
1 red pepper, sliced
1 green pepper, sliced
1 yellow pepper, sliced
Place tofu squares in a bowl and pour 1/2 of the marinade over them. Toss gently to coate, cover
and refrigerate for 1 hour to overnight. Stir occasionally. (Also refrigerate the remaining marinade.)
When you are ready to fire up the grill, add all the other vegetables and pour on the remaining marinade.
Let sit for 15 minutes, while the coals are getting hot.
Thread the veggies and tofu, alternating colors and textures, on the skewers. Lay threaded skewers
on teh grill, and cook over hot coals for 15 minutes or so, turning every 5 minutes. Brush with leftover marinade a
few times during cooking, and once again just before serving.
