1 head cauliflower, broken into flowerets
1 head lettuce, torn into small pieces
1 onion, finely chopped
1/4 cup imitation bacon bits
1/2 cup tofu mayonnaise
1/2 cup sweetener (optional)
1/2 cup vegan Parmesan Cheez substitute
Combine cauliflower, lettuce, and onion in salad bowl.
Mix mayonnaise, sweetener, and Parmesan cheez in a small mixing bowl, then
add to vegetables, along with bacon bits. If serving later in the day, reserve the bacon bits and add just before serving
to keep them from becoming soggy.
